2022 WISMER VINEYARD-FOX CROFT BLOCK GAMAY ROSE
The Fox Croft block of the Wismer Vineyard is located on the corner of Victoria Avenue and Moyer Road in Vineland, within the Twenty Mile Bench
sub-appellation of Niagara Escarpment. This Gamay Noir ‘Rose’ was fermented cold and bottled early to retain the aromatic, fruit components. The wine was fermented completely dry, produced to be consumed young in a fruit forward style. Notes of strawberry, spice and rhubarb with well-balanced acidity.
Hand-harvested, crushed and destemmed, then the grapes were cold settled for 12 hours before pressing for colour extraction. Pressed to 600 Liter/Tonne, racked off ‘Juice Lees’ after 24 hours cold settling. Fermented at 12 oC for 3 weeks with a commercial yeast strain. Bottled late June 2022 to retain, fresh fruit component.
