The philosophy behind 2027 Cellars focuses on the expression of distinctive terrior from each single vineyard. By meticulously managing the vineyards with the same techniques and care, each of the single vineyard wines showcases their own specific character.
The wines are handcrafted and produced in small batches from various mature vineyards in different Sub-Appellations throughout the Niagara Region. Utilizing the virtual winery model allows resources to be invested in the vineyards and winemaking. Viticulture management drives the quality of our wines, the vast majority of effort is focused in the vineyard.
The wines of 2027 Cellars are focused on three varietals... Riesling, Pinot Noir and Chardonnay. We believe these three grapes are best suited to the climate of the Niagara Region, and have proven to be competitive on the world stage.
Each Chardonnay and Riesling vineyard is hand harvested, hand sorted, and whole bunch pressed in separate batches. These small batches of handcrafted wines are made with minimal intervention. By not interfering with the natural wine making process, the vineyards showcase their individuality.
Our Pinot Noir is hand harvested, hand sorted and fermented naturally from wild yeast strains. Manual punch downs of the cap are done on a regular basis to gently extract the colour and flavour from the skins. After the wine has finished fermenting, aging takes place in new and old French oak for 14 months. The wine is then bottled unfined and unfiltered to preserve its natural character. |
